सारस पक्षी, दुनिया के उड़ने वाले परिंदों में सबसे लंबे हैं. सारस, उत्तर प्रदेश का आधिकारिक राज्य पक्षी है. भारत में सारसों की करीब 70 फीसदी आबादी यहीं पाई जाती है. लेकिन ज्यादातर किसान इन्हें पसंद नहीं करते थे, लेकिन अब हालात बदल रहे हैं.
