This is a simple and delicious recipe for roasted red bell peppers sauteed in garlic and olive oil. The peppers are roasted until they are soft and flavorful, then sauteed in garlic and olive oil until they are tender and slightly charred. This dish is perfect as a side dish for your antipasto, appetizer, or Italian sandwiches.

Ingredients:
• 8 red bell peppers
• 1/3 cup olive oil
• 56 cloves garlic (smashed)
• Salt and pepper to taste

Directions:
1. Brush olive oil on each pepper and then add salt & black pepper.
2. Place peppers on a grill or open flame and cook until chard.
3. Let peppers cool down and then peel and remove seeds.
4. Slice peppers into strips.
5. Heat the olive oil in a large skillet over medium heat.
6. Add the garlic and cook for 1 minute, or until fragrant.
7. Add the roasted bell peppers and cook for 5 minutes.
8. Season with salt and pepper to taste.
9. Can be served hot or cold.
