1. Freeze your grapes as you harvest them to keep them fresh and get the fruit to break down prior to fermentation.
2. Combine grapes and all other ingredients EXCEPT YEAST in fermenter and let it sit for 24 hours.
3. After 24 hours, take a hydrometer reading, then add yeast and blend to make sure the grapes are well pulped.
4. Make sure to knock down the fruit cap once or twice a day until fermentation is complete to prevent mold and promote healthy fermentation.
5. Ferment until you get to 1.000 hydrometer reading, or lower.
6. Strain the wine, then let it sit for 24 hours to drop clear. Siphon clean wine into your vessel.
7. The wine is now ready to rack into a secondary fermenter if bottling later, or you could hypothetically distill it into brandy with a low and slow run, utilizing the VEVOR thumper to infuse more flavor.
