No, it’s not just a fish! It’s the new herring Nieuwe Haring as the Dutch call it. It’s the most popular street food in the Netherlands. Every year, towards the middle of June, the young herring is caught, soused and then enoyed by the herringcrazy Dutch. The arrival of the new herring is celebrated on a local holiday ,Vlaggetjesdag. So what makes this fish so special? We asked the herring itself and his partner in crime, Jack Buijs. Eet smakelijk!
