Cinnamon: You love it in your breads and buns, cookies and cakes, pies and puddings. One might even say it's the reigning spice of all things sweet, especially in classic Americana traditions. The list of recipes in which cinnamon stars as the backbone flavor agent is endless.
It's such a prevalent spice that we take it for granted. Toss in a teaspoon here and there and you just know it'll make that batch of oatmeal taste extra sweet and special. But what exactly is cinnamon, and where does it come from?
Although our spice jars often just say "cinnamon," there are actually over 250 species of cinnamon. The cinnamon that we eat is actually processed tree bark from various members of the Cinnamomum genus, evergreen trees that grow in tropical and subtropical climates all over the world. Of these species, some are specifically cultivated and harvested for culinary use, including Cinnamomum cassia and Cinnamomum verum.
