肋眼牛排 Ribeye steak—1片
洋蔥 Onion—1/2個
清酒 Sake—2大匙
蒜頭 Garlic—2粒

清酒 Sake—2大匙
味醂 Mirin—1大匙
砂糖 Sugar—1小匙
醬油 Soy sauce—2大匙
水 Water—100cc
奶油 Butter—2小匙
麵粉 Flour—1/2小匙

牛番茄 Tomato—1個
豌豆 Snow peas—8個
馬鈴薯 Potato—1個

鴻禧菇 Shimeji—100g
乾燥香菇 Dried shitake—3個
雞高湯 Chicken stock—600cc
鹽巴&黑胡椒 Salt&Pepper


PreparationSoup/beef/vegetables
(1) 1/4 of onion, cut into thin slices
(2) 2 cloves of garlic, chop into slices horizontally
(3) 1 potato, cut into thick strips
(4) 8 snow peas, remove strings from them
(5) 1 tomato, remove the stem and cut into slices
(6) Sprinkle some salt on top of tomato slices, marinate for 15 minutes
(7) 3 dried shiitakes(soaked), remove the stem and chop into slices
(8) 100g of shimeji, separate them into small clusters
InstructionSoup
(1) 1 tsp of butter
(2) Add onion slices
(3) Fry until translucent
(4) Add shitake
(5) Add shimeji, fry until golden brown
(6) Add 600cc of chicken stock
(7) Salt & pepper to taste

PreparationRibeye steak(Marinade)
(1) 1/2 of onion, chop into dices
(2) 250g of ribeye steak, cut the tendons
(3) Place a layer of onion dices on the plate
(4) Put ribeye steak on top
(5) Top with another layer of onion dices
(6) Drizzle some sake
(7) Marinate overnight

InstructionVegetables
(1) A pot of water, add potato in it
(2) Add snap peas and blanch them a bit
(3) Take out the snap peas first and cool them down in ice water
(4) Cook the potato until they soften
(5) Add some oil in a frying pan
(6) Add potato, snap peas and tomato slices, salt & pepper to taste
(7) Flip over to panfry the other side of ingredients

Instruction wafu onion sauce
(1) Take out the beef from the refrigerator and remove onion attached on the beef
(2) Add onion dices in a pot
(3) Add 2 tbsp of sake
(4) Add 1 tbsp of mirin
(5) Add 1 tsp of sugar
(6) Add 2 tbsp of soy sauce
(7) Add 100cc of water
(8) Put to low heat and simmer for 20 minutes, take it away from the stove first
After sautéing the beef
(9) Wipe excess oil yet remain the umami essence in the frying pan
(10) Add 2 tsp of butter
(11) Put to medium heat
(12) Sprinkle 1/2 tsp of flour (optional, if you don’t need a condensed sauce)
(13) Add wafu onion sauce
(14) Cook until the sauce condenses

InstructionBeef
(1) Add some oil
(2) Add sliced garlic
(3) Put to low heat
(4) Tilt the frying pan and fry sliced garlic until golden brown
(5) Take the sliced garlic out first
(6) Put to high heat
(7) Put Ribeye Steak in, sautée for about 15 seconds
(8) Some salt
(9) Flip over
(10) Cook until preferred doneness
(11) Wrap it up with a sheet of tinfoil
(12) Let it sit for 3 minutes
(13) 3 minutes later, cut ribeye steak into slices
