INGREDIENTS / for 27 pcs about 5x6cm | 1.97x 2.36inch /
• walnuts, ground (80g | 1 cup)
• flour blend, gluten free (I used Schär Mix C Patisserie) (180g | 1 1/3 cup + 2 1/6 TBSP)
• buckwheat flour (30g | 4 TBSP)
• sugar, powdered (50g | 1/3 cup + 2 tsp)
• zest of half a lemon (6g | 1/2 TBSP)
• xanthan gum (a pinch)
• egg yolk (1 pc)
• butter, unsalted, softened (150g | 1 stick + 2 1/2 TBSP)
• vanilla bean paste (7.5g | 1 1/2 tsp) or vanilla bean (1/2 pc) or vanilla extract (2g | 1/2 tsp)

For Coating
• mixture of powdered and vanilla sugar (I used 30g | 1/4 cup of powdered sugar and 13g | 3 1/4 tsp of vanilla sugar)
