In many restaurants, “upselling” is a cornerstone of their server training. Of course, the basis of providing good service is covered, BUT, the main message to servers is, “your #1 job here is to SELL!”

Training servers to see themselves as “salespeople” often does backfire. Guests are not stupid. Most see right through those “upselling techniques” that make servers come across as impersonal, pushy, and even manipulative. Not an effective way to have guests leave feeling valued, cared for and appreciated.
