This time we visited Marugame Seimen's Tachikawa Wakaba branch for the photo shoot. At Marugame Seimen, each store makes its own noodles in order to produce freshly cooked and delicious noodles. There is no set manual, and each store makes noodles according to the temperature and climate. In addition, some stores have skilled noodle craftsmen who are particularly adept at making noodles. Marugame Seimen has a "noodle craftsman system" and there is a strict examination process to become a noodle craftsman. The exam tests whether the candidate has a deep understanding of the meaning and purpose of each step in the noodlemaking process, and is said to be extremely difficult, with a pass rate of approximately 40%. Mr. Nigoridaibo, who appears in the video, is one of these noodle craftsmen. If he passes the test, he can wear a uniform with a navy blue collar, and he says that he worked hard for the test because he longed to wear the uniform.
Most of the products are handmade in the store, and it was impressive to see how much time and effort is put into each item, even in the way the tempura is fried.
