How to make Buc-ee's Chopped Brisket Sliders At Home!

Bucees Smoked Texas brisket sliders , Bucees style chopped brisket sandwiches
Making a delicious brisket can be a bit of a challenge, but once you hit that sweet spot then you are golden.
Let’s begin , I picked up a nice 10 to 11 lb brisket, I started trimming the top layer of fat , and any hard edges around the sides. Dont throw out the trimmings, you will need that to make what i call liquid gold (tallow). You can put the trimming’s in a crockpot and melt all that fat for 6 hours, you will use this latter.
Now we are ready to season our meat , I started off rubbing it down with Wsauce both sides, and then added my brisket rub both sides , next I added Bucees bbq rub both side’s. Cover and put in fridge overnight, this will help the seasoning penetrate the meat.

Ok here we go , start off by preheating your smoker to 225, we are gonna cook this slow and low. Now you are ready to add your brisket, I put mine on the top grate and added a drip pan under the brisket, next I added another pan filled with water.

If you notice your temp stuck on 160 or 165 you are in what is called the stall process, no need to panic. What I do is I take mine off and prepare to wrap. Now you are ready to use that home made liquid gold

Lay the brisket down on pink butcher paper and poor some of that liquid tallow all over it and then wrap it tight , poor a little more on top we wanna keep this moist as possible.

Put it back in the smoker and watch that temp. We are looking for that 203 sweet spot, I pulled mine out at 200 and let it rest. I really didn’t go through the whole 4 to 6 hour resting process as I had hungry guests waiting for that chopped brisket sandwich.

Next step unwrap that brisket and begin chopping , don’t forget to yell out fresh brisket on the board. After you got that all chopped up start mixing the Bucees bbq sauce in , mix it real good and be very generous with the sauce.

Last step you are now ready to serve. You can use any bread that you want. Today we are using mini Hawaiian rolls because we are making sliders. And that’s about it you made a Bucees chopped brisket slider
