Pork knuckle is a traditional Bavarian delicacy. Served with potato dumplings, it's a beloved and wellknown dish that's synonymous with Bavarian culture around the world. There are, of course, many different recipes. Wolfgang Reithmeier, the head chef at Munich's Hofbräuhaus, shows us how to prepare an authentic Bavarian pork knuckleand he reveals the secret to making it nice and crispy.
