Traditional Brazilian Pão de Queijo - SO GOOD!

Loved having my son in the kitchen with me today! We ate a lot of this bread when we lived in Brazil. Give it a try and let me know what you think.

Here’s what you need:

3 cups YOKI flour (see link below)
1 cup milk
1/2 cup water
1/2 cup oil
1 tsp kosher salt
1 egg
1 cup grated cheese (Parmesan or other hard cheese)

In a saucepan, bring to just a slight boil the water, oil and salt. In a large mixing bowl, add the YOKI flour and milk and then add the boiling water/oil mixture. Mix with a large fork until it all comes together.

Add your egg and mix well. The dough will be wet. Add your cheese and begin to knead in the bowl. Add more YOKI flour (1/4 cup at a time), if needed, to reach the consistency you’re looking for.

Drop by the spoonful or roll into balls and place on a parchment lined baking sheet. Bake in a preheated 400 degree oven for 1618 min or until they are golden brown and sound hollow to the tap.
