Top Sirloin Coulotte Cooked Santa Maria Style

If you are from California you have probably heard of and had Santa Maria barbeque. And when we think of Santa Maria barbeque, we think of tritip. Although before people started grilling tritip, people actually used the top sirloin cut in Santa Maria. They would put the piece of meat on a steak, and cook it directly over red oak wood. So in this video I try and recreate this old school method of Santa Maria barbeque using a sirloin coulotte.
