TikTok’s Viral Crispy Potatoes

This time I tried to make the Tiktok viral crispy potatoes using goose fat and it worked really well. For this recipe, I used Maris Piper potatoes as they are good for roasting.

Ingredients:
800900g potatoes cut into big chunks
56 tbsp goose fat
34 garlic cloves sliced
2 rosemary sprigs
Salt and pepper

Method:
1. Cover the potatoes with water, add salt and parboil for 8mins. Don’t worry if it's a little mashy on the outside because that will give the crispness when it's roasted later.
2. Few minutes before the potatoes are ready, preheat the roasting tray with 3 tbsp goose fat for about 23 minutes.
3. Once the potatoes are ready, drain them and lay them on the tray.
4. Add salt and pepper, rosemary and garlic. Carefully turn the potatoes to get some fat on all of the sides. Drizzle a little more fat on top (about 23 tbsp).
5. Stick them in the oven for 40 mins altogether at 220 degree celsius, turning the potatoes after 20 mins.
6. Enjoy!
