Pie pastry
2 1/2 cups allpurpose flour, plus more to dust, 300 gms
1 Tbsp granulated sugar
1/2 tsp sea salt
1/2 lb COLD unsalted butter, (2 sticks) diced into 1/4" pieces
8 Tbsp ice water

Note: this makes 2 pie crust, but my pie pan is very deep, so I have to use 1 1/2 of the crust to fit my pan. If you have a regular 9 in pie dish then this should make 2 pies. DON"T skip freezing it after fitting it into the pie dish. My above linked classic sweet potato pie recipe has a shortening/butter crust that does not require this step.

Sweet Potato Pie
3 1/2 cups premade filling
1 cup heavy cream
3 tbsp butter
34 eggs ( i used 2 but i think 3 4 would be better for how deep my pie is to make is more firm)

Sweet Potato Rolls
4 cups flour, 480 gms ( this is the MAX amount needed) You may need a bit less
1 packet instant yeast
2 tbsp brown sugar
1 tsp salt
spices: 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger
1/2 cup milk
3 tbsp butter ( plus more to rub into the rolls)
1 egg
1 cup sweet potato puree
1 tbsp heavy cream or 1 beat of egg to brush on the rolls

Glaze
12 tbsp honey
1 1/2 tbsp butter
fresh rosemary/ thyme
