Tepsi or Tebsi is one of Iraq's most popular dishes that is a favourite all year round thanks to it's UMAMI and Tangy flavours. It's a casserole that is stacked with vegetables and ultrajuicy kofta, and together they produce some of the deepest flavours I've ever had. Even more so, I think it's perfect for winter when you want something with deep body and homey flavours.

50g Seedless Wet Tamarind + 150ml Hot Water
100g Tomato Passata
30g Tomato Paste
1 Tsp Vinegar
1 Tsp Pomegranate Molasses
1 Tsp Sugar
1 Tsp Salt
1/2 Tsp Black Pepper
1/4 Tsp Cayenne Pepper
250ml Water

Kofta:
500g Minced Lamb
1 Medium Onion
40g Fine Bread Crumbs
15g Parsley
1 Garlic Clove
1 Tsp Salt
3/4 Tsp Black Pepper

Veggies:
12 Slim Long Aubergines
23 Tomatoes
23 Medium Potatoes
23 Small Green Bell Peppers
23 Onions
1 Green Chilli (optional)
