Before the strip was synonymous with celebrity chefs like Gordon Ramsay and Bobby Flay, it was where good, honest, gamblin’ folks went for a night of luxury on the low. In order to keep customers spending high, casino’s (like the Flamingo, ran by famous Vegas Mobster Bugsy Spiegel) would offer extravagant meals for a modest price, in the hopes of keeping clientele within the business. Thus, Las Vegas classics like the Prime Rib, Martini, and Shrimp Cocktail were born. So strap in folks, let me learn you a thing or two about old Vegas. Adam

INGREDIENTS...
O.G. Prime Rib:
45 Bonein Ribeye Roast
Kosher Salt, to taste
1 cups Creme Fraiche
2 Tbsp Prepared Horseradish
½ bunch Chives, sliced thin
Kosher Salt, to taste
Black Pepper, to taste

OldSchool Shrimp Cocktail:
1215 medium shrimp
Ten cups of water
½ Lemon
½ Onion
2 Bay leaves
Kosher Salt
Black Peppercorns
Lemon Wedges, for garnish
Parsley, for garnish

O.G. Cocktail Sauce:
1 cup Ketchup
3 Tbsp Horseradish, more to taste
1 tsp Tabasco, more to taste
1 tsp Worcestershire
Juice and Zest of a Lemon, more to taste
1 Tbsp Vodka
½ Garlic clove, minced
Black Pepper, to taste
Kosher Salt, to taste

O.G. Dirty Martini:
1 1/2 ounces Gin or Vodka
1/2 ounce (15 ml) dry vermouth
1/2 ounce (15 ml) olive brine (adjust to taste)
Ice cubes
1 or 2 blue cheesestuffed olives, for garnish
