In todays video, I'm going to show you how to make the notorious vegan privilege burrito aka healthy, simple, quick, budget and easy vegan burrito under $2, using very ordinary ingredients that you can find in any grocery store/supermarket anywhere. (recipe written below)
In my last video, I responded to one of the most common collective and societal excuse for not going vegan "not everyone can go vegan" or "veganism is a privilege", which is partially true, and dropped some more truth.

Recipe (the vegan privilege burrito, 5 servings)
Ingredients:
1 can (15.5 oz.) black chili beans/cooked black beans
1/2 can red kidney beans (optional)
1 can cooked sweet corn
1 beefsteak tomato
1/2 onion
4 cloves garlic
1/2 bunch cilantro (optional)
1/21 lime (optional)
Corn/flour tortillas
1 cup uncooked jasmine rice
Taco seasoning or spices
1 avocado or guacamole (optional)
Hot sauce (optional)
1. Rinse & cook the jasmine rice with a 1:1 water to rice ratio, rest.
2. Chop the vegetables (everything except avocado).
3. Drain the beans and corn, cook them with onion garlic & spices, rest.
4. Combine cooled jasmine rice with diced tomatoes and chopped cilantro.
5. Toast the tortilla (optional), slice the avocado & assemble. Enjoy!
