Super fruity and velvety strawberry jam with an intense taste. For this strawberry jam I use a preserving sugar for strawberry jam. This is a mixture of sugar, pectin and citric acid that is specially formulated for strawberries.
I cook the jam in my Ninja Foodi Blender & Soup Maker, which the manufacturer gave me free of charge for testing purposes.
You can also prepare the strawberry jam in a normal pot, in a Thermomix, Monsieur Cuisine or a similar food processor.
If you use a normal pot, you can blend the strawberries with a hand blender before cooking. This makes the jam velvety.
When cooking the jam in the pot, it is sufficient if the jam continues to boil for 3 minutes after boiling.
Since the Ninja Foodi Blender & Soup Maker´s jam program heats the jam at intervals and not continuously for several minutes, I couldn't stick to the recommended cooking time of 3 minutes for the preserving sugar. Despite this, it worked very well with the Ninja Foodi´s jam program.
To keep the strawberry jam red, you can, e.g.:
* Freeze the jam jars. However, the glasses should not be filled to the brim. If this is not possible, the jam should definitely be stored in a cool and dark place.
* Use lateripening strawberries with dark flesh.
* Add some elderberry, blackcurrant, beetroot juice or some food coloring to the jam
* Freeze the strawberries and only use portions to make jam.
