Spaghetti with Meat Sauce Recipe:
12 oz dried spaghetti
1 onion
1 large carrot
2 celery
5 cloves garlic
1 lb ground beef (15/85)
2 Italian sausage links
1/4 tsp fennel
1 can tomato paste
1 tablespoon Italian seasoning
1 28oz can crushed tomatoes
1 cup water
2 tablespoons fish sauce
1/4 cup parmesan cheese
2 tablespoons parsley & basil, finely chopped

Cook spaghetti for half of the time on the package’s direction in salted water, drain and set aside. Save 1/2 cup pasta water to lubricate the sauce.

In a food processor, finely chop onion, celery, carrot, garlic.
In a large heavy bottom pot, add olive oil to cover the bottom. On medium high heat, add chopped vegetables and cook for 35 minutes until caramelized. Season with salt while it is cooking.
Once it has browned, add the ground beef and Italian sausage. Break it down and mix with the vegetables. Add Italian seasoning and chopped fennel, and finally the cooked pasta along with the pasta water. Mix and keep the spaghetti submerged, simmering for 57 minutes.

Finish seasoning with 2 tbsp parmesan cheese and freshly chopped Italian parsley and basil (about 1 tbsp each). Mix until it comes together and serve with your favorite flavor spiciness and extra cheese!
