Garlic scape pesto:
1012 blanched garlic scapes
3 0z fresh basil
40 shelled pistachios
1/23/4 cup EVOO
5 oz parmigianno reggiano cheese
salt to taste
Cauliflower puree:
1 large head of cauliflower
enough milk to barely cover cauliflower
kosher salt to taste
Scallop sauce:
1 medium shallot
2 garlic cloves
1 1/3 cup white wine
1 tbsp lemon juice
reserved scallop feet
juice from cooked scallops
34 oz cold unsalted butter
1 tbsp fresh chopped dill
salt and pepper to taste
