The Eat More Plants Official VEGAN BEER BATTER
1 1/3 cups + 1 heaping tbsp Cake Flour (can sub AP flour but won't be as light and crispy)
12 oz COLD Beer or COLD Seltzer Water
1/2 tbsp Lawry's Seasoning Salt or favorite seasoning
(If batter is too thin add a little more flour, if batter is too thick add a little cold water and mix well)
1/2 lb Oyster Mushrooms

1/2 cup Vegan Mayo
2 tbsp Lemon Juice
3 tbsp fresh Dill
1 heaping tbsp Capers
3 tbsp Dill Pickle (or about 3/4 of a medium Dill Pickle)
1/2 tbsp Dijon Mustard
1/2 tbsp Sugar or sweetener of choice
1/2 tsp Salt
1/4 tsp Black Pepper
