Poolish
220g bread flour
220g water, room temp
heaping 1/4 teaspoon instant yeast
Finished Dough
375g bread flour
257g water, room temp
12g fine sea salt
1/2 teaspoon (grams?) instant yeast
Spicy mayoli:
1/2 cup (120g) mayonnaise
3 cloves garlic, grated
2 tablespoons (30g) sriracha
juice of 1 lemon
salt and pepper to taste
Filling:
1/3 cup Spicy Mayoli (save the rest in the fridge)
4 slices gouda cheese
4 slices chedar cheese
2 large tomatoes (gonna brulee)
12 good slices mortadella, seared
4 large eggs, fried
fresh basil leaves
