Sushi Rice
3 cups cooked sushi rice.

Sushi rice seasoning liquid
3 Tbsp rice vinegar
4 tsp sugar
4 tsp salt
1 small sheet kombu (optional)

Heat all ingredients until sugar is dissolved. Pour liquid over cooked rice and gently fold fold in without smashing the rice. Set aside and let cool

Spicy tuna mixure
8 oz fresh Sashimi grade tuna chopped
1/4 cup Kewpie mayo
1 Tbsp siriacha sauce
1/4 tsp sesame oil
1/2 tsp soy sauce
1/2 tsp ginger grated

In a bowl, add mayo, siriacha, sesame oil, ginger and soy sauce. Mix until evenly combined. Than add tuna and gently mix until coated.

Avocado sliced
Cucumber juilenned
green onion thinly sliced
1 package of Nori sushi sheets

Assemble sushi as shown. Slice, serve with wasabi, pickled ginger and enjoy!
