所需材料
江鱼仔
青椒
青色小辣椒
红葱
蒜头
调味豆酱 白糖 生抽 花雕酒
Ingredients (Diana Aw)
1. Anchovies 80100g
2. Green chilli 100g, thick diagonally sliced
3. Green chilli padi 2pcs, diced
4. Red onion 2pcs, sliced
5. Garlic 2 cloves, sliced
Seasoning
1. Salted bean paste 12tsp
2. Hua tiao wine little
3. Sugar little
4. Light soya sauce little
Method
1. Blanch the anchovies for 10sec and drain
2. Deep fry the anchovies under low heat till golden brown. Drain and set aside
3. Add little anchovies oil in the wok and add in chilli padi, red onion and garlic and stir fry till fragrant under high heat. Add in salted bean paste and stir fry. Add Hua tiao wine and mix well.
4. Add in green chilli and continue to stir fry. May add little oil if too dry. Add sugar and fry for ~3min. Add fried anchovies and light soya sauce and continue to fry.
5. Serve and enjoy!
