I thought this would be the perfect time to have a couple of friends over to enjoy a beautiful afternoon together! Mother's Day is on May 14th & King Charles III Coronation is May 6th, two more occasions to enjoy an Afternoon Tea Party!

12 hard boiled eggs chopped up
Red onion, fresh or dried parsley, chopped pickles, mayo, dijon mustard, S & P

Honey Fig Baked Crostini
Baguette, Olive oil, 1/2 cup of ricotta cheese, 8 slices of fig, 1 tablespoon of honey, freshly ground, black pepper, fresh mint leaves.
Slice a baguette into 8 1inch pieces. Brush each slice with oil. Bake the bread until golden about 8 to 10 minutes. Remove from oven and allow to cool for about five minutes. Spread ricotta cheese on each slice, top with fig, drizzle on honey, a bit of black pepper and some fresh mint.
