Snacks From Scratch | Small Camping Trip Grocery Haul

Hello and welcome to today’s vlog! I am sharing a few snacks that I am prepping for my family to take with us on a camping trip. I will also be sharing a small grocery haul of what we are packing to take with us. As well as a glimpse into our camping trip. I hope that you enjoy this video and it gives you or your family some snack inspiration whether you are going camping or not.

Iced Oatmeal Cookies: I haven’t perfected these yet, but you are more than welcome to give them a try.
Cookie:
1 cup oats
1 cup all purpose flour
1 tsp arrowroot starch
3 tbsp molasses
1/2 tsp baking soda
1 tsp baking powder
1 1/4 tsp cinnamon
1/4 tsp nutmeg
8 tbsp butter (melted)
1/2 cup brown sugar
1/4 cup coconut sugar or cane sugar
1 egg
1 tsp vanilla extract
pinch of salt

Glaze:
1 cup powdered sugar
1/4 tsp vanilla extract
1 1/2 tbsp milk

Preheat your oven to 350F. In a stand mixer or large bowl add your dry ingredients and mix to combine. Then add in your wet ingredients until the dry mixture is well incorporated into the wet ingredients where it has a thick like consistency. Prepare a large baking sheet with parchment paper. Scoop out a a nickel size amount of dough on to the parchment paper. Repeat for the remaining dough. If you scoop out too much it will expand in the oven. Press the dough flat into the baking sheet with the palm of your hand. Bake for 1214 minutes. Once the cookies have completely cooled. Make your icing by adding powdered sugar, vanilla extract, and milk to a stand mixer and mix well. Dip your cookie into the icing and let the icing sit until hardened. Enjoy.
