Smoking Pork Butt -- Start To Finish On The Weber Kettle

With a 9.5 pound Pork Butt to smoke, I decided to change things up a bit and add a Southwestern flavor profile to this gorgeous piece of meat. Using the Weber Kettle and some hickory wood, a nearly 10 hour smoking session resulted some of the juiciest, most flavorful Pulled Pork I've ever made. And the fun didn't stop there, as I used the Southwestern Pork to make not only a sandwich, but also tocos and as a topping for a Cilantro Lime Rice bowl.
