Smoked Cod cooked in coconut milk is Quick and Easy to cook! Ready in 30 minutes. A very tasty fish fillet packed with flavour from coconut milk with Spinach and Sweet Red Peppers. Fish and coconut is a perfect match. This is the other alternative of poaching smoked fish with milk. During busy weekdays at work, it's good to have a healthy meal as an alternative of meat. Vegetables can be mixed in the cooking such as broccoli, spinach, sweet peppers, peas and mange tout or sweet snap peas, 5 a day (vegtables) in one meal. A healthy meal indeed full of vitamins. Best served with rice.

1 can coconut milk
1 inch thick ginger
2 garlic clove
1 onion
400 gms spinach
1 red sweet peppers
