Skinny Overnight English Muffin Breakfast Casserole Weight Watchers Recipe| With Calories & Macros | WW Breakfast Meal Prep. Ingredients:
16 oz Kroger Cubed ham
1 medium Uncooked bell pepper
1 medium Uncooked onion
6 muffins Thomas' 100% whole wheat English muffins
1 cup Kroger Reduced fat finely shredded sharp cheddar cheese
1 cup Shredded partskim mozzarella cheese
12 large Eggs
2 cups Plain unsweetened almond milk
1⁄2 cup Member's Mark Nonfat plain Greek yogurt
1 tsp Dry mustard
1⁄2 tsp Table salt
1⁄2 tsp Paprika
1⁄4 tsp Black pepper
1⁄2 tsp Granulated garlic
In a large pan on med/high heat, cook ham, onions and bell pepper until ham is heated through and veggies are softened. While ham and veggies are cooking, chop up english muffins into pieces. In a 13X9 casserole dish, sprayed with cooking spray, add half of english muffin pieces followed by the ham and veggies. repeat with remaining muffins and ham mixture. Mix cheeses together and sprinkle on top. In a large bowl, add remaining ingredients and mix well until eggs are beaten and ingredients are fully incorporated. Pour egg mixture over the top of the cheese. Cover with plastic wrap and refrigerate for at least 24 hours or overnight. When you are ready to bake the casserole, remove it from the refrigerator and let it set while you preheat your oven to 350 F. Bake for 6065 minutes, or until eggs are set up and middle is firm.
