Hey y'all! If you've never made focaccia, today is your lucky day!! This recipe is easy, and with a few changes, you can add any flavors you want...even fruit! It's simple and sooooo worth it! Better than any cheesy bread you get at a restaurant!

FOCACCIA BREAD:
500g bread flour
420ml warm water (about 100F)
6g instant yeast
5g honey (you could also use sugar or maple syrup)
10g sea salt
1 tbsp olive oil (plus more for drizzle and oiling pan)
Garlic butter
Mozzarella cheese, shredded

For the Butter:
1 stick butter, melted
1 tsp garlic powder
1/2 tsp onion powder
1 tsp oregano
1 tsp minced garlic

Mix together the water, yeast, honey, salt and 1 tbsp olive oil. Mix in the flour and scrape the sides of the bowl. Cover and let rest for 15 minutes. While the dough is resting, make your garlic butter by melting the butter and adding all of the seasonings. Mix well and let it sit on the counter so that it will cool and become a sort of paste consistency. After 15 minutes, uncover the dough and do several stretch and folds. Cover and let sit another 15 minutes. Do 4 more stretch and folds, turning the bowl 1/4 turn each time. Cover and let sit for 1 1/2 hours. It will be doubled, bubbly and very jiggly. Get a 9x13 pan or baking sheet (preferably metal), line with parchment paper and add 23 tbsp olive oil. Spread it to coat the parchment paper. Pour the dough onto the oiled pan and gently stretch it into a rectangle. It doesn't have to be perfect. Your butter mixture should now be a paste consistency. Spread about 3/4 of the butter over the dough and add some of the cheese. Fold each side in and pinch the ends. Flip the dough so that the smooth side is up. Cover and let sit another 1 1/2 hours until it doubles again. While it's rising, preheat the oven to 430F. Drizzle on more olive oil and then dimple the dough gently. Let the remaining butter sit on the stove to melt again. Bake on the BOTTOM RACK in your oven for 15 minutes. Take it out, top with more shredded mozzarella and bake for another 10 minutes. Once out of the oven, immediately brush it with the remaining butter mixture.
