I made three pizzas, one with wholemilk mozzarella, one with partskim mozzarella, and one with a 5050 mix of whole and partskim (all Trader Joes brand mozzarella). The difference between the three was negligible. Any option works great.
Dough Recipe (makes one 12" pizza)
153 grams King Arthur bread flour
100 ml water
4.3 grams table salt
2 grams evo
1.5 grams sugar
.5 grams instant dry yeast
