Saint Paul de Vence is an incredibly charming little hill town a fair distance from the water. Count me among those who would not want to stay there more than maybe a night or two. It is very touristy, particularly by day, and most shops and the dozens of art galleries are all geared for tourist/shoppers. It is all a little too "Disneyesque" for me, although again it is very charming and pretty.
I can't imagine staying there for a couple weeks, but I'm sure there are those who would disagree. I would think if your big concern is beaches, you'd want to stay on the coast.
