Duck and Potatoes Ingredients:
1 whole duck (45lbs)
68 Red skin potatoes (palm size)
Oregano (one bunch fresh Thyme would work too)
Large Onion (Large slices or quartered)
Salt/Pepper to taste
1 Cup Port wine
1 Cup Chicken Stock (or bone broth)
2Tbls Apple Cider vinegar
