Red Velvet Cheesecake Cookies Recipe are soft, moist chocolate cookies stuffed red velvet cookies with a layer of sweet cream cheese filling in the middle. Our red velvet cookies make a big impression and are a decadent addition to your Christmas cookie collection! They have a few extra steps but are a really easy cookie recipe, and if you have red velvet fans like we do, they're going to love these stuffed cookies!

Red Velvet Cheesecake Cookies Recipe Ingredients
Cheesecake Filling
4 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract

Red Velvet Cookie Ingredients
1 2/3 cup flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/4 cup granulated sugar
4 tablespoons melted butter
2 eggs
1 tablespoon heavy cream
1 teaspoon white vinegar
2 teaspoons vanilla extract
1/2 teaspoon red food coloring gel (or your favorite food coloring)

Red Velvet Cheesecake Cookies Recipe Directions
To start, we’re going to make the cheesecake filling. This will need to freeze for about 2 hours before making the cookies. Combine 4 oz of softened cream cheese, ⅓ cup granulated sugar, and 1 teaspoon vanilla extract. Beat with a hand or stand mixer until it’s well blended. Then spoon out about a tablespoon of the filling onto a sheet of parchment paper, about 12 14 little circles. Freeze these little cheesecake mounds until they’re solid, about 2 hours.

For the Red Velvet Cookies:
In a large mixing bowl, measure out 1 ⅔ cups flour, ¼ cup unsweetened cocoa powder, 1 teaspoon baking powder, ¼ teaspoon baking soda and ½ teaspoon kosher salt, and I’m just giving it a quick crush here. Whisk all of the dry ingredients to combine.

In another large bowl, add 1 ¼ cup granulated sugar, 4 tablespoons melted butter, 2 eggs, a tablespoon of heavy cream, a teaspoon white vinegar, 2 teaspoons vanilla extract, and a ½ teaspoon of red food coloring gel. I’m using the Wilton gel, which helps gives the cookies a deeper red color.

Give this all a whisk to combine. Then add in the dry ingredients, and whisk to combine. Cover and place in the refrigerator for about an hour to chill.

When you’re ready to bake the cookies, preheat the oven to 350 degrees.

Spread out some powdered sugar, we’re going to roll the cookies in this. To assemble, take about a tablespoon size ball of the red velvet cookie dough, and press it into powdered sugar and shape into a disc. Place one of the frozen cheesecake discs in the middle of a cookie, and top with another flattened red velvet cookie. Press and seal the edges. Cover with powdered sugar and place on a parchment lined baking sheet.

This recipe will make 12 14 cookies. Space at least 2 inches apart on a cookie sheet and bake for about 10 minutes until the cookies are firm around the edges. Let cool on the tray for 10 minutes, then move to a wire rack to cool completely. We keep these cookies in the refrigerator for up to 5 days.
