Can you record a podcast or interview with multiple USB microphones on one computer? The quick answer is yes. Recording a podcast or video interview with multiple people using different mics with separate tracks isn't easy, but it's possible.

In this video I walk you through setting up an aggregate connection on MacOS using Garageband. This set up can be used on several DAWs (Digital Audio Workstations) and I've listed some options below for both MacOS and Windows.
