This recipe is courtesy of “The South Beach Diet” cook book. It’s quick and easy and very healthy. You can make all kinds of variations of this recipe. I like mine with spinach, egg and cheese. My husband likes his with all the ingredience just as written with the peppers and onions. I like to make it in the pie dish because it’s so much quicker with less clean up.
Vegetable Quiche Cups to go:
1 10oz package of frozen chopped spinach
¾ Cup liquid egg substitute (plus one egg)
¾ Cup shredded reduced fat cheese
¼ Cup diced bell peppers
¼ Cup diced onions
3 drops hot pepper sauce (optional)
Thaw or microwave spinach for 2 min on high. Drain the excess liquid. If using a muffin pan, line it with foil baking cups and spray with cooking spray. If using pie plate, spray with cooking spray.
Combine egg substitute, cheese, peppers, onions and spinach in a bowl. Mix well. Divide evenly among the muffin cups or pour into pie plate. Bake at 350* for 20 minutes for cups or 40min for pie plate, until knife inserted in the center comes out clean.
