Pork Neck Bones!

Jackie’s Southern Soul

Hey Guys! Welcome back to my channel. In today’s video I’m going to cook some good ole Country Pork Neck Bones. I haven’t made them in a few years but they turned out better than ever. I have to thank my daughter Sierra for telling me to add fat back because it really brings out the flavor of pork. I wasn’t really a big fan of them when I cooked them as an adult until I learned how to cook them. Thanks Sierra!

*** Now this isn’t a dish for anyone who doesn’t eat pork. Please keep all rude comments to yourself!***

Pork Neck Bones:
3 Large Pork Neck Bones
6 to 8 Strips Fat Back
2 Cups Chopped Celery
1 Large Onion Chopped
8 to 10 Cups Water
1 Cup Vinegar
1/2 Cup Salt
2 Teaspoons Garlic Salt
1 Teaspoon Granulated Onion
1 Teaspoon Granulated Garlic
1 Teaspoon Basil
1 Teaspoon Seasoning Salt
1 Teaspoon Slap Ya Mama Seasoning
1 Teaspoon Sazon Seasoning
1/2 Teaspoon Crushed Red Pepper Flakes
1/2 Teaspoon Black Pepper
6 Bay Leaves

Wash neck bones then add them to a bowl in your sink. Add the vinegar and salt and fill the bowl with water. Mix together until the salt is dissolved. This will help to clean the pork. Let sit for 30 minutes.
Once time is up pour off water and clean the neck bones removing anything that looks undesirable.
Using a large boiler pot place the neck bones in it. Add the celery and onions, the seasonings, the fat back and the bay leaves. Lastly add enough water to cover everything in the pot about 8 to 10 cups.
Cook over medium high heat until the pot comes to a rapid boil. At this time reduce the heat and cook over medium heat. You will continue to lower the heat until the pot is boiling at the speed that you want.
Cook for two hours. During the cooking process, occasionally check the liquid level. I didn’t have to add anymore water to mine.
Once done turn the heat back up to boil down to a thickened sauce. You won’t have to add any thickening to your liquid because the neck bones thicken naturally.
Let cool before serving.
Serve over rice with a side of green beans or cabbage and cornbread. Enjoy!
