This Pineapple Upside Down Cake (with fresh strawberries) just tastes like summer to me. The mix of flavors with the pineapple, strawberries (which weren't planned but, thanks to my sweet neighbors, Jim & Gail, were a perfect addition!), and cinnamon was perfection. It may not win a beauty contest, but this cake was a blue ribbon in flavor! Give it a try and let me know what you think. I always love hearing what's cooking in your kitchen.
