Pineapple Habanero Hot Sauce!

Recipe:
13 Habanero Peppers
2 Large Red Jalapeño Peppers
Dried Peppers of your choice (optional) I used 3 Ancho Chiles, 6 Arbol Chiles and 3 Guallio Chiles
4 Medium/Large Shallots
6 Cloves Garlic
1 Medium/Large Pineapple
1 Cup of Apple Cider Vinegar (White Vinegar works too!)
1 Cup of White Sugar
1 Cup of Water
Salt and Pepper

Instructions:

Remove the stems of all your peppers (removed seeds if you wish, but not necessary, we will strain this out later).
Dice and rough chop all your peppers.
Remove the core and dice your pineapple, removing the ends and outer rhine.
Crush and remove skins of all your garlic cloves.
Remove skins and chop up your shallots.
In a medium saucepan or medium pot bring 1 cup of water and 1 cup of Apple Cider Vinegar (or white vinegar) to a boil.
Add in all your fresh peppers, garlic, shallots, dried peppers (if you chose to use them), pineapple and 1 cup of sugar to the boiling water. I added salt and pepper a this point. How much you use is your call!
Bring back to a boil and cover. Let all the fruits and peppers boil until very soft (soft enough to blend).
Remove from heat, strain all the water and vinegar out and add all boiled items to the blender.
Blend until liquified.
Once everything has been liquified, strain through a wire mesh strainer into a large bowl (you may repeat the straining process multiple times if you wish). This will remove the fibers, chunks and seeds from our sauce.
If your sauce is too thick for your liking you can also add, at small amounts at a time, Apple Cider Vinegar or White Vinegar to your blend to thin it out. REMEMBER to taste as you dilute so that you don't end up with a vinegary tasting hot sauce.
Once you get the consistency you like and everything is strained out, pour it into your favorite jars/bottles!!

I put this hot sauce on tortilla chips and some crock pot chilli, but you can use it in almost ANYTHING!!

Keep in fridge to make it last!
