Pho Sapa is Hanoi style, the northern style. You will find most pho in the U.S. to be Sài Gòn style (from the south).

As a noob, I think northern pho is lighter, with a clean and simple broth. Fewer extras, but no compromise on flavor. Freshly prepared flat noodles are delicious. Since the broth was less salty, I didn't feel the need to guzzle water while eating.
