Blender Pesto:
2 ice cubes
1/4 cup of cold butter
1 cup olive oil
4 ounces of goat cheese (or cheese of choice)
a pinch of salt
2 garlic cloves, roughly chopped
a handful of soft herbs
2 handfuls of roughly chopped tender greens
a squeeze of lemon juice
Add the ingredients into the blender in the order they are listed. Blend until smooth, then transfer it to a bowl or container. Taste it for seasoning and adjust with more oil, salt or lemon juice to taste.
For extra sharpness, fold in a grated hard cheese, like parmesan, aged manchego, or parmesan.
