RECIPE
Place brisket on top rack of smoker with water pan underneath at 7PM the night before at 190 degrees for 12 Hrs (7 PM 7AM)
The next morning at 7AM, add ice to the water pan and increase smoker temperature to 300 degrees
Continue to cook for 5 hours or until the internal temperature of the brisket reaches 190 degrees, whichever is sooner. (20 hours total cook time)
Remove brisket and wrap in tallowsoaked butcher paper, place in aluminum pan with 1/2 cup water and foil tightly
Hold brisket at 150 for 56 hours or longer until dinner time (26 hours total cook + hold time)
Remove brisket, slice and serve.
