This is a video demonstrating the use of a copper diffuser with cast iron. Copper diffusers are amazing because they help to get a really even temperature across the surface of cast iron. Copper diffusers should be used over no more than medium heat, otherwise, they turn a very dark charcoal color. They will still perform the same, but they just look different. Diffusers are not intended for hightemperature cooking. Copper diffusers work best with cast iron when there is direct contact.
I also talk a little in this video about infrared thermometers. Often times when giving cooking instructions, people will say what temperature to heat a skillet over. Better results are obtained when you tell people to what temperature to heat a skillet. The best way to know for sure is with an infrared thermometer.
