Onion Rings u0026 A Salad

Tonight we decided we wanted a lighter dinner. So instead of a heavy meat and 3 meal we decided on a salad and onion rings. We love, love onion rings. Especially homemade onion rings. They are so easy and simple to make. Takes no time at all to cut up the onions, mix the batter, and fry them up.
Simple, easy, delicious. The salad itself is a complete meal. Try this today, tomorrow, or next week. You will be so glad you did.

2 large sweet onions, cut into 1/2" rings
1 1/4 cup self rising flour
1 cup milk
2 Tbsp corn starch
pinch salt
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp cayenne pepper (or to your taste)

Stir ingredients together and set aside.
Slice onions into 1/2" rings, separating them into individual rings.
Heat 2" oil in deep skillet to 325 degrees. When oil is hot, coat onion rings in batter and deep fry in batches for 56 minutes or until golden. Remove to sheet pan fitted with a wire rack to drain. Sprinkle with salt while hot. Continue frying onions until all are cooked.
