One Pot Cajun Chicken And Rice Recipe

1 1/2 lb chicken breast or boneless chicken thighs sliced thinly
salt to taste
ground black pepper to taste
1 tsp onion powder
1 tsp garlic powder
Cajun seasoning to taste
Season the chicken with above listed ingredients and combine.

2 tbsp oil
2 tbsp butter
Add oil and butter to the skillet and brown the chicken pieces on all sides, before removing from the pan, and reserving.

1 cup bell peppers diced
2 tsp garlic finely chopped or 2 tsp garlic paste
1/2 lemon juiced
Sauté the veggies for about 1 minute before adding the garlic. Combine and stir for about 30 seconds. Add lemon juice and combine.

1 cup rice
Add the rice to the pan and combine

2 cups chicken broth or 1 tbsp chicken bouillon added to 2 cups water
1 tsp Cajun Seasoning
1 tsp Italian seasoning
1 tsp paprika
1 tbsp hot sauce
Add all of the remaining listed ingredients and combine. Lower the flame to medium. Cover with the lid and allow the rice to cook for about 18 minutes, depending on the type of rice you use. During the last 2 minutes of the cooking process readd the chicken back to the skillet and combine.
