Today we are cooking 3 racks of baby back ribs on the offset smoker using only oak wood as fuel.
* Temp held 220 to 250 F for 6 hours. Tea kettle filled with water by fire box to increase smoke ring. *
Step 1) remove membrane on back of ribs. Using a paper towel helps you grip it better.
Step 2) Cover with yellow mustard. this will help bind the seasoning.
Step 3) Add rub and through on smoker. Cook until desired color is met or at least till the rub sticks to the meat.
Step 4) wrap in tin foil, add half a beer. Place meat side down for remainder of cook.
Step 5) unwrap and glaze for 3045 mins
Step 6) Enjoy!
