Incredibly delicious way to cook lentils! This lentils recipe tastes better than meat, simple and the result is amazing! ℹ With the ingredients listed in the recipe you get about 12 delicious patties.

Ingredients:
4oz | 120g | 1/2 cup red split lentils
5oz | 160g | 2/3 cup oat or buckwheat flour
11fl oz | 350ml | 1.5 cup dairyfree milk

2tsp baking powder
1/4tsp baking soda
Salt to taste

1 onion
1/4 yellow bell pepper
4oz | 100g | 1/2 cup tomatoes
2tbsp chopped parsley
1/2tsp Korean chilli flakes (Gochugaru)
salt to taste

‍Cooking tips:
❗You can substitute buckwheat flour for any flour of your choice.
❗You can make homemade oat flour by blending the oats until they form a fine flour.
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗You can substitute Korean chilli flakes (Gochugaru) for crushed red pepper flakes or cayenne pepper.
❗Feel free to experiment with the topping. You can use mushrooms, eggplant, dairyfree cheese etc.

Method:
Soak 4oz | 120g | 1/2 cup red split lentils in water for 3 hours
Combine 5oz | 160g | 2/3 cup oat or buckwheat flour in a mixing bowl
ℹ You can substitute buckwheat flour for any flour of your choice.
ℹ You can make homemade oat flour by blending the oats until they form a fine flour.
2tsp baking powder
1/4tsp baking soda
salt to taste
Rinse lentils with water and drain
Add lentils to a blender
Add 11fl oz | 350ml | 1.5 cup dairyfree milk and blitz
Add lentils mixture to a bowl.
Whisk into a creamy batter
Set aside for 5 minutes
To make the topping chop 1 onion, add 1/4 diced yellow bell pepper, cut 4oz | 100g | 1/2 cup tomatoes and add 2tbsp chopped parsley.
Season with 1/2tsp Korean chilli flakes (Gochugaru) and salt to taste.
Heat a little oil in a nonstick skillet
Pour half a ladle of lentil batter in the centre
Top up with vegetable mix and press lentil pancake slightly with a spoon.
Fry over medium heat until the base is slightly golden (23 minutes)
Flip over and fry over medium heat for another 23 minutes.
Serve hot with a dairyfree yogurt, chutney or sauce of your choice and enjoy!
These lentil pancakes are so delicious and better than meat!
