Recipe
Ingredients  

1 Tbsp (14g) Unsalted Butter
1 tsp (5ml) Olive Oil 
1 Brown (Yellow) Onion, Thinly Sliced
2 Sirloin Steaks 
Sourdough or Bread of Choice 
Lettuce Mix, Rocket or Cos 
Extra Virgin Olive Oil 
Seasoning To Taste 

Steak Salad Dressing  

1 Whole Egg
2 1/2 tsp (15ml) White Vinegar 
1 tsp (10g) Dijon Mustard 
3/4 Cup (180ml) Vegetable Oil 
2 Tbsp (40g) Wholegrain Mustard 
1 Tbsp (20g) Creamed Horseradish 
2 tsp (10ml) Truffle Oil 
Seasoning To Taste 

Notes

I cooked the steak rare to mediumrare but if you like it cooked more or even less, the below temperatures will help you with that.

Steak Cooking Temperatures
Rare 50.C 122.F
Medium Rare 55.C 131.F
Medium 60.C 140.F
Medium Well 65.C 149.F
Well Done 70.C 158.F

This steak sandwich can be altered to suit your taste and everything can be swapped and changed.

To make the mayonnaise by hand. Add the base ingredients except the oil into a mixing bowl. Secure the bowl in place with a damp towel or grip mat and whisk the base together until combined. During this, very slowly pour in the oil whilst vigorously whisking until thick. If you add the oil in too quick, it will start to pool on top and doing this can split the emulsion. It’s best to gradually add it in until thick.
