Mini Cheesecakes
Crust:
One packet graham crackers
6 Tbsp melted butter
Filling:
1 block cream cheese
½ cup plain Greek yogurt
¼ cup honey
1 egg
1 Tbsp vanilla extract
Pinch salt
Favorite jam (for topping)
Preheat oven to 350 degrees F. Grease a muffin tin. Crush graham crackers and mix with melted butter. Place crust in the bottom third of each muffin tin. Place all the filling ingredients in a stand mixer and mix until wellblended. Divide evenly in the cups on top of the crust. Bake for 25 to 30 minutes. Allow them to cool slightly. Top with dollop of your favorite jam.
